This recipe combines simplicity, flavor, and a touch of nostalgia. Buckwheat, known as "kasha" in Eastern Europe, takes center stage in this comforting meal.


Buckwheat with Mushrooms


Ingredients:

- 1 cup buckwheat groats

- 2 cups water

- Salt, to taste

- 2 tablespoons butter

- 1 medium onion, finely chopped

- 8 ounces mushrooms (button or cremini), sliced

- Fresh green onions (scallions), chopped (for garnish)


Instructions:

1. Cook the Buckwheat:

   - Rinse the buckwheat groats under cold water.

   - In a pot, combine the rinsed buckwheat, water, and a pinch of salt.

   - Cover with a lid and simmer on low heat for 20-25 minutes until the buckwheat is tender and the water is absorbed.


2. Sauté the Veggies:

   - In a separate pan, melt the butter over medium heat.

   - Add the chopped onion and sliced mushrooms.

   - Stir and cook until the mixture turns golden brown and the mushrooms are tender.


3. Combine and Rest:

   - Drain any excess water from the cooked buckwheat.

   - Mix the buckwheat with the sautéed mushroom and onion mixture.

   - Let it sit for five minutes to allow the flavors to meld.


4. Serve:

   - Top the dish with fresh green onions.

   - Enjoy your buckwheat with mushrooms as a hearty side or even a light main course.
