Vegan Vėdarai (Lithuanian Sausage)
Introduction:
Vėdarai, also known as Veganiski Vėdarai, is a plant-based version of the classic Lithuanian sausage. Traditionally, vėdarai are made by stuffing a potato mixture into pig intestines. However, fear not—our vegan version skips the pig intestines altogether! Instead, we'll create a flavorful and wholesome sausage using plant-based ingredients.
Ingredients:
- Potatoes - 1.5 kg
- Spring Greens (Cabbages) - 2
- Mushrooms - 250 grams
- Onions - 1 or 2
- Coconut Milk - half a can
- Semolina- 2 to 3 tablespoons (optional; you can skip it if unavailable)
- Oil- 100 ml
- Soy Sauce
- Salt
- Black Pepper
Instructions:
1. Prepare the Filling:
- Boil and mash the potatoes until they're nice and fluffy.
- Finely chop the spring greens (cabbages), mushrooms, and onions.
- In a pan, sauté the onions and mushrooms until golden brown.
2. Mix It All Together:
- Combine the mashed potatoes, sautéed mushrooms, spring greens, coconut milk, semolina (if using), soy sauce, salt, and black pepper.
- The proportions don't need to be exact—trust your taste buds!
3. Form the Sausages:
- Shape the mixture into sausage-like forms. You can make them as thick or thin as you like.
4. Cook:
- Heat oil in a pan.
- Fry the vegan vėdarai until they're nicely browned on all sides.
5. Serve:
- Enjoy your vegan vėdarai with a dollop of vegan yogurt, sautéed mushrooms, onions, and fresh herbs.
- Pair them with a side salad or sauerkraut for a complete meal.
