Lithuanian Vegan Carrot Soup

Creamy Vegan Carrot Soup


Ingredients:

- 1 tablespoon olive oil (or use water for an oil-free version)

- 2 pounds carrots, peeled and cut into 1/2-inch pieces (approximately 6 cups)

- 1 medium onion, diced (about 2 cups)

- 3 stalks celery, cut into 1/2-inch pieces (about 1 1/2 cups)

- 4 cloves garlic, minced

- 1 teaspoon sea salt

- 1 teaspoon dried thyme

- 1/2 teaspoon red pepper flakes (adjust to taste)

- 3 cups vegetable broth (store-bought or homemade)

- 1 (14-ounce) can full-fat coconut milk (or light coconut milk for a less rich version)


Instructions:

1. Sauté the Aromatics:

   - Heat olive oil in a large pot over medium heat.

   - Add the diced onion, chopped celery, and carrot pieces. Sauté until the onions are translucent and the carrots start to soften (about 7 minutes).

   - Stir in the minced garlic, sea salt, dried thyme, and red pepper flakes. Cook for another 1-2 minutes until fragrant.


2. Add the Broth and Simmer:

   - Pour in the vegetable broth and bring the mixture to a gentle simmer.

   - Cover the pot and let it cook until the carrots are tender.


3. Make It Creamy:

   - Add the full-fat coconut milk to the pot. This will provide richness and create a velvety texture.

   - Blend the soup until smooth using an immersion blender or transfer it to a regular blender in batches.


4. Serve and Enjoy:

   - Ladle the creamy carrot soup into bowls.

   - Top with crispy chickpeas, croutons, or serve it alongside crusty bread.

   - Pair it with garlicky sautéed greens, crispy baked pesto tofu, or lemon and herb roasted chicken thighs.
