Vegan Lithuanian Beetroot Cutlets


Introduction:

Ingredients:

- 2 medium-sized beetroots, peeled and grated

- 1 cup cooked brown rice(or any other cooked grain like quinoa or buckwheat)

- 1 medium onion, finely chopped

- 2 cloves of garlic, minced

- 1/2 cup breadcrumbs (use gluten-free if needed)

- 1 tablespoon ground flaxseed (mixed with 3 tablespoons water, as an egg substitute)

- Salt and pepper, to taste

- Oil for frying

Instructions:

1. Prepare the Flaxseed "Egg":

   - Mix the ground flaxseed with water and let it sit for a few minutes until it thickens. This will act as your egg binder.


2. Combine the Ingredients:

   - In a large bowl, mix together the grated beetroots, cooked rice, chopped onion, minced garlic, breadcrumbs, and the flaxseed "egg."

   - Season with salt and pepper according to your taste.


3. Shape the Cutlets:

   - Take a handful of the mixture and shape it into patties. You can make them as thick or thin as you like.


4. Pan-Fry:

   - Heat oil in a skillet over medium heat.

   - Fry the beetroot cutlets until they're crispy and golden on both sides. This should take about 3-4 minutes per side.
